I found the recipe at http://allrecipes.com/recipe/fresh-spinach-salad/ as a result of a search for spinach recipes (because we had some fresh spinach in the refrigerator). The 94 reviews of the recipe gave it a 4.5 star rating. The rating was well deserved.
The recipe claims that it yields 5-7 servings. That is true for the salad ingredients, but I would guess that the dressing would probably yield more like 10 servings.
Ingredients
1/2 cup white sugar
1/2 cup white vinegar
1 cup vegetable oil (I used olive oil)
2 tbsp Worcestershire sauce
1/3 cup ketchup
1 small onion, chopped
5 slices bacon (I used 6 of the precooked, thick microwaveable maple bacon)
3 eggs (hard boiled)
1 pound fresh spinach - rinsed, dried, and torn into bite-size pieces
4 oz can slice water chestnuts, drained
Directions
1. In a blender or food processor, combine sugar, vinegar, oil, Worcestershire sauce, ketchup, and onion, and process until smooth. Set aside.
2. Cook and crumble bacon, and set aside.
3. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from cold water, peel, and chop.
4. In a large bowl, toss together the spinach, water chestnuts, bacon, and eggs. Serve with the dressing.
